Lean Stir Fry

Stir fry is great because you can put your favorite veggies, combine them, and enjoy the crisp fresh flavors all at once.  Stir fry dishes are meant to leave the veggies super crisp, firm, bright in color, and almost raw.  Homemade is always better, because you can control how much oil is used.

Lean Stir Fry

Ingredients


  • 1 1/2 cloves garlic, crushed

  • 2 teaspoons chopped fresh ginger root, divided

  • 1 tbsp sesame oil, divided

  • 1 small head broccoli, cut into florets

  • 1/2 cup snow peas

  • 3/4 cup julienne carrots

  • 1/2 cup halved green beans

  • 2 tbsp soy sauce

  • 2 1/2 tbsp water

  • 1/4 cup chopped onion (optional)

  • 1/2 tbsp sald




Instructions



  1. In large skillet saute, garlic, 1 tsp ginger, and 1 tbsp sesame oil until combined is dissolved. Mix in broccoli, snow peas, carrots, and green beans, tossing to lightly coat.

  2. Heat remaining 1 tbsp oil in large skillet or wok over medium heat. Cook vegetables in oil for 2 minutes, stirring constantly to prevent burning. Stir in soy sauce and water. Mix in onion, salt, and remaining 1 tsp ginger. Cook until vegetables are tender but still crisp.
