Apple Fritter Cups
1:54 PMI'm a sucker for food. I love to eat it. I love to cook it. I love to, well just be around it. I had bout these puff pastry cups and they just sat there. I had no idea what I was going to do with them at first but then I remembered that I had apples. Got that little light bulb above my head. It flickered a bit, but eventually it stayed on. This is the fastest most easiest and delicious recipe ever. Only down fall is the puff pastry cups are not that big. I wasn't expecting them to be very big, but was thinking they were going to be bigger than what they were.
Ingredients Needed For 12
- One medium or large apple
- Pepperidge Farm Puff Pastry Cups
- 1/2 tsp of lemon juice
- 1 Tbsp of Cinnamon (less or more if you prefer)
- Small pinch of salt
- 2 Tbsp surgar
- Chopped Walnut (as much or little as you prefer)
- Preheat over to 400 degrees Fahrenheit. Place the puff pastries on a non greased pan and bake for 25 mins or as instructed on the package. While the pastries are in the oven follow continue with the rest of recipe.
- Chop some walnuts into small pieces. I had these on hand in my freezer so I just gave them a rough chop.
- Peal and chop (dice) your apple into bite size pieces. You want them small enough to fill the cups.
- In a small saucepan, add the apples, walnuts, lemon juice, cinnamon, salt and sugar. Heat on medium heat and mix everything well and let it come to a small boil.
After the puff pastries have cooled then take the tip of a paring know or steak knife and gently score the circle on top. It does not go all the way to the bottom. These babies are hallow so you are just removing the top piece. After you have done that, go ahead and start spooning in the filling. You can also make some icing to drizzle on top, which I was planning to do but surprisingly I didn't have any powder sugar.
