Protein Pancakes

Protein pancakes are really good, simple and versatile. You can flavor them with apples, spices, pumpkin spice, and all sorts of fresh fruit.  The possibilities are endless. Here is one of my favorite protein pancake recipes that I actually eat all the time.  Those that know me, I am not a fan of pancakes, until now.

  • 1/2 cup egg whites

  • 1 tbsp. of coconut flour

  • 1 scoop vanilla protein powder

  • Cinnamon and/or Nutmeg {to taste}

  • Truvia or Stevia power {to taste}

  • 1 tbsp. of coconut oil

  • 1/2 cup berries of choice.[/ezcol_1half] [ezcol_1half_end]Directions:



  1. Preheat medium pan & begin warming the coconut oil

  2. Whisk together the egg whites & coconut flour until smooth

  3. Add the whey powder, Cinnamon & Nutmeg

  4. Beat until, smooth

  5. Pour batter in pan to desire size

  6. Cook each side for 2-3 minutes or until solid and lightly golden

  7. Serve and garnish with berries of your choice.[/ezcol_1half_end]


Active Cooking Time: 4-6 Minutes
Total Time {Start to Finish}: 8-10 Minutes
