Banana Nut Granola

I have been wanting to do this post for quite some time now and with my busy schedule, I am proud to say that, I'm please to do this for you.  Yup that's right, as the title of this post says, it's home made banana nut granola.  I absolutely love this stuff.  I make it about once a week for the week.  I eat it for breakfast, as a snack or even desert.


It's pretty healthy because it's homemade and not a lot of crap in it. You can add stuff and remove any items you like.  The ingredients are simple and it doesn't take that long to make.  So lets get started.

Ingredients/ items needed:



  • 2 very ripe bananas

  • 1/3 cup olive oil

  • 1/3 cup honey {maple syrup can be used if no honey}

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • dash of sea salt {regular salt is good too}

  • 3-4 cups old fashion oats

  • 1/2 cup dried cranberries {optional}

  • 1/2 cup pecans/walnuts/praline pieces {all optional}

  • Large baking sheet

  • Foil or some parchment paper


1. Preheat oven to 350F. In a large bowl, mix bananas,  olive oil, honey, cinnamon, nutmeg, and salt.

2. Add 3 cups of oats, the cranberries, and nuts of your choice if you choose to use them and mix well.  If the mixture is too moist then slowly add a little bit more oats till it starts to look a bit like the picture.

3. Place mixture on lined baking sheet and spread out.  Don't make the mistake I did and make too much for a small baking sheet. Might take a bit longer to bake.  Place it in the oven for about 20 mins and then check it.  If the top is a golden brown then take it out and stir it, them place back in the oven.  Continue doing this till it's all a golden brown.

4.  When it's done, it should look like this {pic below}  Sorry this is a bit darker, but I assure you it's not burnt. As I said above, I made to much for the pan and so some was getting more cooked then the rest.

5. Allow it to cool before placing in storage container.  I store mines in this jar on my counter. Keeps it fresh and easy access for snacking.
